"93% Pinot Noir and 7% Sauvignon Blanc from Harding’s Road and given 72 hours skin contact and cool-fermented to 13.4% alc. and 3.2 g/L RS. Bright ruby-hued pink colour with youthful purple hues on rim. The nose is fresh and up-front with voluminous aromas of cherry fruit, and raspberries and cream, revealing confectionary notes and hints of herbs and mouthwatering minerals. Dry to taste and medium-bodied, bold and up-front flavours of dark red cherries and raspberries intermingle with fresh herbs and nuances of tamarillos. The fruit is juicy and refreshing, with good acid cut, and the wine follows a fine, textural line, the dryness balancing the fruit sweetness. Thirst-quenching herb, tamarillo and mineral notes carry through to a strong, concentrated and lingering finish. The fruit was hand harvested and transported to the winery’s cool store where the bins were chilled to 2-4oC. Once down to temperature the fruit was de-stemmed and lightly crushed into open fermenters. The must was kept cold and hand plunged twice daily for 72 hours and then pressed. The juice was then cold settled, racked and fermented using Sauvignon Blanc yeasts.
