“Sophie’s Rosé, is named after Sophie Findlay of fashion house Zambesi who helped design Invivo’s unique branding. The wine has a beautiful rose petal colour and aromas of crushed strawberries with a hint of tropical fruit and citrus. The palate is vibrant and full in the mouth with pronounced berry and citrus and sweetness only to balance acidity. This wine is a perfect summer drink and will accompany barbeque, salads and seafood extremely well.”

"Very pale cherry pink in color, the 2011 Sophie’s Rosé is made from Pinot Noir and shows pronounced wild strawberry and raspberry aromas with touches of red cherries and Provence herbs. Dry, light to medium-bodied and offering a good concentration of pure red berry flavors, it has a medium to long finish. Drink it now to 2014"

The fruit was hand harvested and transported to the winery’s cool store where the bins were chilled to 2-4oC. Once down to temperature the fruit was de-stemmed and lightly crushed into open fermenters. The must was kept cold and hand plunged twice daily for 72 hours and then pressed. The juice was then cold settled, racked and fermented using Sauvignon Blanc yeasts.
